Ingredients
- FOR THE WALNUT MEAT
1 cup kale
1 cup walnuts
12 oz cauliflower rice
6 lettuce leaves
2 tbsp nutritional yeast
1 tbsp chilli powder
salt to taste
1 tbsp cumin
1 avocado
- FOR THE CASHEW QUESO
1 cup raw cashews
1 garlic clove, chopped
2 tbsp nutritional yeast
1/2 tsp ground cumin
1 tbsp harissa
1 tsp chilli powder
Directions
- grab a medium sized pan and begin sauteeing cauliflower rice with walnuts
- add a 1/2 cup of water and mix in cumin, chilli powder, nutritional yeast and kale
- continue stir frying the mixture until it’s fully heated
- Blend all the ingredients for the cashew queso with hot water and add more hot water to think if necessary
- you’re done! spoon the mixture into the lettuce boats drizzle some cashew queso if you want and add sliced avocado
