Dinner & Dessert with Sumita of Plantnrgy

- Mug Cake Ingredients
5 tbsp almond flour (blanched)
4 tsp rice flour
1 medium ripe banana (mashed)
2 tbsp Cocao powder
⅓ cup almond milk
1 tbsp almond butter (or any nut butter)
1 ½ tbsp dark chocolate chips
1 ½ tsp apple cider vinegar
⅛ teaspoon baking soda
¼ teaspoon baking powder
Pinch of salt
- Pulled Mushroom Ingredients
4 king oyster mushrooms
2 Tbsp extra virgin olive oil
1 tsp smoked paprika
¼ tsp salt
¼ tsp cayenne pepper
2 cloves garlic chopped
¼ cup BBQ sauce (we used Refolo’s date bbq sauce but any will do)
¼ onion chopped
Directions
- Mug Cake Directions
- Mix all the ingredients and add in a mug (I did brush a little bit of coconut oil in my mug)
- Cook in the microwave for 5 minutes (1000 watt microwave used)
- Top with nut butter, more chocolate, and enjoy!
- Pulled Mushroom Directions
- Shred mushrooms with a fork until texture resembles pulled pork
- Grab a medium sized pan and put oil put garlic and onion in the pan
- Put shredded mushroom, and all other ingredients
- Sautee until slightly browned (enjoy in a bowl or as part of a sandwich)
