Our founder, Lola, teamed up with Sumita from Plantnrgy to create a dinner and dessert in 30 minutes. Below are the recipes we shared on our IG live in addition to more information about Sumita.

Ingredients

  • Mug Cake Ingredients
  • 5 tbsp almond flour (blanched)

  • 4 tsp rice flour

  • 1 medium ripe banana (mashed)

  • 2 tbsp Cocao powder

  • ⅓ cup almond milk

  • 1 tbsp almond butter (or any nut butter)

  • 1 ½ tbsp dark chocolate chips

  • 1 ½ tsp apple cider vinegar

  • ⅛ teaspoon baking soda

  • ¼ teaspoon baking powder

  • Pinch of salt

  • Pulled Mushroom Ingredients
  • 4 king oyster mushrooms

  • 2 Tbsp extra virgin olive oil

  • 1 tsp smoked paprika

  • ¼ tsp salt

  • ¼ tsp cayenne pepper

  • 2 cloves garlic chopped

  • ¼ cup BBQ sauce (we used Refolo’s date bbq sauce but any will do)

  • ¼ onion chopped

Directions

  • Mug Cake Directions
  • Mix all the ingredients and add in a mug (I did brush a little bit of coconut oil in my mug)
  • Cook in the microwave for 5 minutes (1000 watt microwave used)
  • Top with nut butter, more chocolate, and enjoy!
  • Pulled Mushroom Directions
  • Shred mushrooms with a fork until texture resembles pulled pork
  • Grab a medium sized pan and put oil put garlic and onion in the pan
  • Put shredded mushroom, and all other ingredients
  • Sautee until slightly browned (enjoy in a bowl or as part of a sandwich)
